Ingredients
For the Pie Crust
- 1¼ cups all-purpose flour
- ½ teaspoon salt
- 1 tablespoon granulated sugar
- ½ cup cold unsalted butter, cut into small cubes
- 3–4 tablespoons ice water
Or use one 9-inch refrigerated or homemade pie crust.
For the Custard Filling
- 4 large eggs
- ¾ cup granulated sugar
- 2 cups whole milk
- ½ cup heavy cream
- 2 teaspoons pure vanilla extract
- ¼ teaspoon salt
- ¼ teaspoon freshly grated nutmeg
- Additional nutmeg for sprinkling on top
Ingredient Notes
Whole Milk
Whole milk gives the custard a creamy but still delicate texture. Avoid skim milk because the filling can become less rich.
Heavy Cream
A small amount of cream makes the custard especially smooth and luxurious.
Eggs
Eggs are what give custard pie its classic silky texture. Use large eggs for the proportions listed.
Nutmeg
Freshly grated nutmeg gives the pie a traditional old-fashioned flavor. Ground nutmeg works too.
Vanilla
Pure vanilla extract adds warmth and balances the richness of the eggs and dairy.
How to Make Old-Fashioned Custard Pie
1. Prepare the Pie Crust
If making homemade crust, whisk together the flour, salt, and sugar in a bowl.
Add the cold butter.
Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
Gradually add the ice water, one tablespoon at a time, mixing just until the dough comes together.
Don’t overwork the dough.
Shape it into a disk, wrap it, and refrigerate for about 30 minutes.
2. Roll Out the Dough
Preheat the oven to 375°F (190°C).
Lightly flour your work surface.
Roll the chilled dough into a circle approximately 11 inches wide.
Carefully transfer it to a 9-inch pie dish.
Gently press the dough into the bottom and sides of the dish.
Trim excess dough around the edges and crimp the crust however you like.
3. Prepare the Custard
In a large mixing bowl, whisk together the eggs, sugar, and salt.
Whisk gently rather than aggressively. You don’t want to incorporate too much air into the custard.
Add the milk, heavy cream, and vanilla.
Whisk until smooth.
Stir in ¼ teaspoon of nutmeg.
4. Strain the Filling
For an exceptionally smooth custard, pour the mixture through a fine-mesh strainer into another bowl or large measuring cup.
This removes any small pieces of cooked egg or bits of shell.
It also helps create that beautifully smooth, old-fashioned custard texture.
5. Fill the Pie
Place the pie crust on a baking sheet.
Carefully pour the custard mixture into the crust.
Sprinkle the top lightly with additional nutmeg.
Don’t overfill the crust. Leave a little room at the top because the custard will puff slightly as it bakes.
6. Bake the Custard Pie
Carefully transfer the pie to the oven.
Bake at 375°F for 15 minutes.
Then reduce the oven temperature to 350°F (175°C) and continue baking for approximately 30–40 minutes.
The pie is done when the edges are set but the center still has a slight gentle jiggle when the pan is carefully moved.
Don’t wait until the center is completely firm in the oven. The custard will continue to set as it cools.
If the crust begins browning too quickly, loosely cover the edges with aluminum foil.
7. Cool Completely
Remove the pie from the oven and place it on a cooling rack.
Allow it to cool for at least 2 hours before slicing.
For the cleanest slices and firmest custard, refrigerate it for several hours after it has cooled.
How to Tell When Custard Pie Is Done
The most important thing is not to overbake it.
Look for:
- Firm edges
- Slightly puffed surface
- Center that gently jiggles
- No liquid custard sloshing in the middle
A thermometer can also help. The center should generally reach around 175–180°F (79–82°C).
Tips for the Best Custard Pie
Don’t Overbeat the Eggs
Too much whisking introduces air bubbles, which can cause the custard to puff and develop an uneven texture.
Use Room-Temperature Eggs
They blend more easily with the dairy and sugar.
Don’t Boil the Milk
If warming the milk, keep it gentle. Very hot dairy can partially cook the eggs when combined.
Strain the Custard
This simple step makes a noticeable difference in smoothness.
Don’t Overbake
A custard pie should have a slight wobble in the center when it comes out of the oven.
Let It Cool
Cutting the pie while it’s hot can cause the filling to collapse or appear runny.
Variations
Cinnamon Custard Pie
Add ½ teaspoon ground cinnamon along with the nutmeg.
Maple Custard Pie
Replace ¼ cup of the granulated sugar with pure maple syrup.
Coconut Custard Pie
Replace ½ cup of the milk with canned coconut milk and add ½ cup shredded coconut.
Lemon Custard Pie
Add 1 tablespoon finely grated lemon zest and 1 tablespoon fresh lemon juice.
Brown Sugar Custard Pie
Replace the granulated sugar with light brown sugar for a deeper caramel-like flavor.
Storage
Cover the cooled pie and refrigerate for up to 4 days.
Because this pie contains eggs and dairy, it should not be left at room temperature for extended periods.
For the best texture, serve it chilled or allow it to sit at room temperature for about 15–20 minutes before serving.
What to Serve With Custard Pie
This pie is delicious on its own, but you can serve it with:
- Fresh whipped cream
- Vanilla ice cream
- Fresh berries
- A dusting of powdered sugar
- Caramel sauce
- A sprinkle of cinnamon or nutmeg
A small spoonful of lightly sweetened whipped cream is especially good with the creamy custard.
